You might initially assume this is another recipe for buttermilk pancakes based on the photographs below. Well, reconsider. These delicious corn fritters are different from pancakes in taste and texture. How about a whole different take on one of breakfast’s most well-known dishes? As soon as the corn fritters are on their plates, your family will start asking for more!

Making these corn fritters at home is easy and quick. A can of creamed corn, eggs, butter, sugar, salt, baking soda, and flour are the only items you’ll need on hand. Additionally, you’ll need some vegetable oil on hand to fry these fritters to a golden brown perfection. It works great to fry them in a cast iron skillet.

Simply keep adding milk to the batter until you achieve the desired consistency for a more pancake-like texture. Starting with 2-4 tbsp and adding extra milk as necessary is what we advise. More milk can always be added, but once it has been added, it is quite difficult to remove. You should also use a griddle rather than a frying pan if you decide to make pancakes.

This dish is a fantastic substitute for more conventional breakfast options. It may be made into pancakes or fried in the typical corn fritter style. Although we haven’t tried it yet, we have a good feeling that these fritters would go well with a hearty serving of bacon and eggs. For a more authentic Mexican flavor, you could even add some salsa and sour cream. There are countless options!

CORN FRITTERS Recipe Print Image 10 INGREDIENTS 1 creamed corn can 2 eggs 2 tablespoons melted butter 1 cup sugar 12 teaspoon salt 2 teaspoons of baking powder 1.5 cups of flour oil from plants (for frying) INSTRUCTIONS All ingredients should be combined in a medium bowl. On the stove, warm up some vegetable oil in a skillet or pan. Pour batter into the pan by spoonfuls once the oil is heated. Fritters should be fried for 1-2 minutes or until golden brown. With tongs, remove the finished fritters from the oil. Butter and maple syrup should be served hot. NOTES Simply add milk to the batter until you get the correct consistency to make pancakes instead of fritters. Like you would with regular pancake batter, bake on a griddle.
