These delectable biscuits made with coconut flour, onions, and herbs will melt in your mouth. They go well with heartier dishes like meatloaf or grilled salmon. For those who value their health and are gluten intolerant, this dish is a perfect option because coconut flour is both gluten free and high in fiber.
Start by transferring the dry ingredients into a sizable bowl and then begin making your coconut flour biscuits. Then, use a hand mixer to combine the eggs and softened coconut oil in the bowl. Then add the minced scallions, grated garlic, and herbs, and stir thoroughly with a spatula. You can substitute cheddar and bacon or cinnamon and honey for the scallions and herbs.
Scoop out about 2 tablespoons of the biscuit mixture, roll it into a ball, and set it on the baking sheet lined with parchment paper using an ice cream scoop or a tablespoon. 12 coconut flour biscuits should result from this recipe.

1 INGREDIENTS Coconut flour, 1 cup, and 1 teaspoon of baking powder. 12 teaspoon salt 4 eggs Coconut oil softened to 1/3 cup but not melted. 3 grated or finely minced garlic cloves 2 tablespoons of finely chopped scallions or green onions 2 teaspoons of your preferred herb, chopped finely. Excellent options are rosemary, cilantro, dill, parsley, and cilantro. INSTRUCTIONS Set the oven to 375 degrees. Use Sil-Pad or parchment paper to line a baking sheet. Sift the baking powder, salt, and coconut flour in a sizable basin. Add the eggs and the softened coconut oil. Mix the ingredients with a hand mixer or a stand mixer until they resemble damp sand in both texture and appearance. Use a spatula to thoroughly combine the herbs, minced scallions, and grated garlic. Scoop out about 2 tablespoons of the biscuit mixture, roll it into a ball, and set it on the baking sheet lined with parchment paper using an ice cream scoop or a tablespoon.
