Is there really anything better than a cookie version of your favorite cake? I didn’t believe it. Look at how lovely they are. They have a bright hue and appear to have taken an hour of heartfelt baking. The good news is that making these cookies just takes 30 minutes. So hurry up and get baking in the kitchen.
Not your usual cookie, these red velvet thumbprint cookies are unique. They have a thick cake-like texture and are fluffy. They significantly enlarge while baking. Therefore, make sure to leave enough of space between each cookie to prevent them from baking together into one.
Before baking, I covered each cookie with crimson sugar to make them more unique. The sugar gives this delicious dessert a lovely, contrasting texture. These are ideal for Santa parties, cookie exchanges, potlucks, and even Valentine’s Day. Red velvet has an unimaginably romantic quality.
Additionally, I strongly advise waiting until the cookies have completely cooled before adding the filling. The filling will become a sticky mess if you apply it just after the cookies come out of the oven. Take it from us—while it might seem appetizing and tempting—you do not want to scrub melted cream cheese frosting off your counter.
These cookies were gone in under a day. Before declaring the cookies finished, store a few for yourself in the refrigerator. As you observe them disappear in front of you, you will be happy that you did.
