We want to start sharing some very tasty recipes once a week in addition to continuing to highlight our most recent and greatest remodeling work; this week’s recipe is for Lemon Poppy Seed Muffins. We’re still remodelaholics, so enjoy the recipes and remember that.
These lemon poppy seed muffins are the most wonderful breakfast you’ve ever had. They are cheery and sunny.
When it comes to breakfast options, there are a few things I usually look for: they must be delectable, I must be able to prepare them ahead of time, and they must be a firm crowd favorite (ahem, even the pickiest eater should love it and rave about it). This raises the bar for my hunt for breakfast recipes quite a bit.

This recipe is good, and I don’t just mean that in a ‘yeah, it’s good, but…’ way. Not at all, no. This is so wonderful that you won’t want to stop eating them for, like, ever.
They are insanely flavorful and completely bright and sunny. You may eat them warm from the oven (or warmed in the microwave) on their own, or you can split them in half and spread them with lots of butter and jam or jelly.
They go amazingly well with a steaming cup of hot coffee and are also wonderful sprinkled with maple syrup or honey.
I often find myself making a super large batch once a month and freezing them all to have enough muffins to last me for weeks. I love to make a batch large enough on Sunday and then just enjoy muffins throughout the week.
Whatever choice you choose, you can be confident that it will taste freshly baked every time and that you can prepare it in advance.
MUFFINS WITH LEMON POPPY SEED These lemon poppy seed muffins are the most wonderful breakfast you’ve ever had. They are cheery and sunny. Everyone will be requesting the recipe from you! Recipe Print
INGREDIENTS Flour, two cups a cup of milk Baking powder, two teaspoons Butter and two eggs. 4 tablespoons of poppies Juiced three lemons 1 teaspoon cinnamon powder Vanilla extract, 1 teaspoon One sugar cup icing sugar to taste INSTRUCTIONS Set the oven to 375°F. Combine the butter and sugar in a bowl. Add the eggs and lemon juice after beating. Add the milk, baking powder, and half of the flour. Add the remaining flour, poppy seeds, cinnamon, and vanilla. Stir to combine. Mix thoroughly until no lumps remain. Place baking cups in the muffin tin. the batter into the cups. Place for 25 minutes in the oven. The muffins should be taken out of the oven. Use a piping bag to add the glaze as a garnish and sprinkle some poppy seeds on top. Enjoy after serving. YUMMIER RECIPES TO TRY:
