Apples that have been stuffed with cinnamon meringue, apple pie, bananas, and berries, oh my.
I actually prefer this dessert to any others we might have here by a long shot. I’ve really cooked it an absurd amount of times over the last few weeks, and I don’t even feel bad about it.
The interesting thing about these roasted stuffed apples is that they began as a crazy experiment when I had a ton of apples and didn’t want to make a pie crust or go through the lengthy pie-making process (really, why does it take so long?).
Oh, did I also mention that I wanted something especially wonderful and that I was feeling particularly lazy about doing the dishes? When creativity and appetites converged, these roasted stuffed apples were born. They required some slicing, some filling experimentation, and a few minutes of slow roasting in the oven.
And my goodness, they were so delicious! You can pretty much load these roasted stuffed apples with whatever you want and call it a day. They are truly addicting, extremely adaptable, and a lot of fun to play with. For instance, after roasting everything, I sprinkled some chopped strawberries on top for color and flavor, but you could also add caramel, peanut butter, or even chocolate and peppermint. Nothing is off limits.
Oh, and don’t forget to create the cinnamon meringue. It’s quick to prepare and well worth the effort. It pairs perfectly with all the roasted sweetness of the apples and is creamy, peppery, and toasty. Additionally, since no dishes need to be washed after they are consumed, you are free to include an additional step for producing meringue.
