Believe me when I say that this is a huge hit with the crowd! The dish of Bacon Corn Guacamole, which I really made for a few gatherings this past month, was gone in less than 5 seconds. It would be an understatement to say that it flew out of the dish and into everyone’s mouth.

But that’s not the only thing I enjoy about this dish; I also like that it just takes a few minutes to prepare (at most 10 minutes), and that you can adjust it to suit your preferences and the ingredients you have in the fridge.

The base is bacon corn guacamole, but you can top it off with anything you want. My personal favorites so far include cheese (cotija or cheddar), caramelized onions, sour cream, and roasted pineapple, though I’ve also had jalapenos and Sriracha sauce in there as well.

Then all that’s left to do is serve it with nachos, warm flour tortillas, bread, or vegetables.

CORN AND BACON GUACAMOLE You might think about eating this Bacon Corn Guacamole for every meal because it is so delicious and simple to make. Get the recipe and prepare it right away or for your upcoming event. Print Recipe

Cut the bacon into small pieces and cook them in a saucepan over medium heat until crispy. Remove from the saucepan and set them aside. Take the corn to a pan over medium heat, add the minced garlic and cook for 2-3 minutes. Chop the avocados into cubes and place them in a large bowl Mash the avocados and add the cheese, red onion, and sour cream. Mix everything together. Incorporate the lemon juice, olive oil, chili powder, key lime juice, green onions, salt, pepper, and crispy bacon. Garnish with half a key lime and a couple of nachos. Serve with nachos and enjoy.

INGREDIENTS three bacon slices 100 g of corn 2 minced garlic cloves Avocados, two cheddar cheese cubes in a cup Cup finely sliced red onion Cup sour cream 1 teaspoon of lemon juice 1-tablespoon olive oil 1 teaspoon of chili powder Juice of two key limes sliced green onions in a cup pepper and salt as desired INSTRUCTIONS The bacon should be diced up and cooked until crispy in a pot over medium heat. Take them out of the pot and place them aside. Add the corn and minced garlic to a pan over medium heat, and simmer for two to three minutes. Place the avocados in a big basin once you’ve chopped them into cubes. Add the cheese, red onion, and sour cream to the mashed avocados. Combine all the ingredients. Add the salt, pepper, green onions, chili powder, key lime juice, lemon juice, olive oil, and crispy bacon. Add some nachos and the remaining half of a key lime as garnish.
