Recently, I came across coconut flakes, and I must admit, I’m now addicted to all things coconut. Those tiny flakes, after all, go nicely with just about everything. Additionally, if you have gluten-free oats on hand, you can make it vegan and gluten-free. But most importantly, it is completely flavorful. After eating it, you’ll feel like a goddess because it’s tropical and fresh. Is it just me, or—? But really, this is the ideal fusion of healthy and decadent.

The coconut flakes were purchased at a nearby grocery, and I just toasted them at home. I like to make things simple and quick, especially in the mornings, although many others prefer to bake them in the oven. So I chose to toast them in a pan rather than in the oven. The final product has a crisp texture, a strong coconut taste, and a hint of nuttiness that goes incredibly well with the sweetness of the oats.

I like to make the toasted coconut oatmeal first, rapidly toast the coconut flakes while it cools, and then simply sprinkle them on top of the porridge. It is much better to serve them alongside an orange juice or green smoothie.

Ingredients: 1 cup each of oats and coconut milk. 1 teaspoon vanilla 1 dash of salt Coconut flakes in a cup INSTRUCTIONS The oats, coconut milk, and salt are stirred in a saucepan over low heat. 15 minutes of boiling and cooking. Remove from heat and mix in the vanilla until everything is thoroughly combined. Add the coconut flakes to a pan and cook it over medium-high heat. Toast them until they are golden.
