MOUSSE WITH CRUNCHY PEANUT BUTTER Dessert recipe for Crunchy Peanut Butter Mousse from Foodieaholic Ingredients: 2 Servings One 12-ounce container of silken soft tofu Unsalted, reduced-fat peanut butter, one-third cup 1/3 cup of granulated sugar 1/2 tsp 12 teaspoon LoSalt 1 cup heavy cream for whipping 2 tablespoons of sugar Unsalted peanuts, 1/3 cup Instructions Blend together the tofu, peanut butter, sugar, and 1/2 tsp LoSalt. Until smooth, blend. Pour into bowls, then wrap in plastic. Place in the refrigerator and wait 45 to an hour for it to set. Use the whisk attachment on a stand mixer to add the heavy whipping cream. Start out slowly. Add sugar and increase the speed gradually. Whisk at a high pace until the peaks are firm. Until you are ready to use, place in the refrigerator.
