MOUSSE WITH CRUNCHY PEANUT BUTTER Dessert recipe for Crunchy Peanut Butter Mousse from Foodieaholic Ingredients: 2 Servings One 12-ounce container of silken soft tofu Unsalted, reduced-fat peanut butter, one-third cup 1/3 cup of granulated sugar 0.5 tsp plus 0.5 tsp LoSalt® 1 cup heavy cream for whipping 2 tablespoons of sugar Unsalted peanuts, 1/3 cup Instructions Blend together the tofu, peanut butter, sugar, and 1/2 tsp LoSalt®. Until smooth, blend. Pour into bowls, then wrap in plastic. Place in the refrigerator and wait 45 to an hour for it to set. Use the whisk attachment on a stand mixer to add the heavy whipping cream. Start out slowly. Add sugar and increase the speed gradually. Whisk at a high pace until the peaks are firm. Until you are ready to use, place in the refrigerator. Sprinkle the peanuts over the mousse after mixing them with 1/2 tsp LoSalt. Add some whipped cream on top. Enjoy! Notes You can use Reddi-wip®, which contains less hydrogenated oil, or a lighter version of your preferred whipped cream.
