GINGER CARROT SOUP Recipe Type: Soup for Carrot Ginger Soup Written by Foodieaholic Ingredients 1 onion Carrots, 1 pound An inch of ginger one garlic clove 2 teaspoons olive oil Add extra cayenne pepper if desired. 1 Tbs. mild miso and 1 litre of water To taste, add salt and freshly ground pepper (or white pepper) Thai basil or basil chiffonade as a garnish Instructions Slice and dice the onion coarsely. Slice and peel carrots. Slice and peel ginger (scrape skin off ginger with the dull back-side of a paring knife). Chop and peel the garlic. In a heavy-bottomed pot, warm the olive oil. Add the ginger, onion, and carrots. Sauté until beginning to soften over medium heat. Cook for another minute after adding the garlic. Cayenne, water, and miso are added. High heat is used to bring to a boil. Reduce the heat to a simmer and cook for 15 minutes with the lid on. If necessary, taste and adjust the salt and pepper. Cook for a further ten minutes, or until very soft. Blend the ingredients until smooth. If it’s too thick, add more water and adjust the seasonings.
